Ex lawyer turned nutrition consultant Kitsa was inspired as a result of her quest to give her son the best possible start in life and in the process rediscovered the unique gift of fermented foods, which have been in existence across most cultures for centuries. Her research led her to the most nutrient dense enzyme rich organic wholefoods which enabled her to recreate many traditional foods and methods in her kitchen for her family and fuelled her passion for food as medicine.

Cultured vegetables are easily assimilated by the body and help digest the foods eaten with them so are ideal for anyone wanting to include more raw food into their diet or simply improve their gut health. Packed with goodness they contain up to 4 billion CFU's per 100g and are ideal for those with dairy or lactose intolerance. A live culture starter is used during the process of fermentation, similar to how yoghurt is made.

The friendly bacteria naturally present in the vegetables, aided by the culture starter, quickly lower the pH making a more acidic environment so that they can grow and reproduce. These bacteria are a powerhouse of probiotic nutrition providing enzymes, organic acids, B vitamins, vitamin C and vitamin K. They may also strengthen the immune system and eliminate toxins. Eating cultured vegetables daily aims to re establish our inner ecosystem and may reduce bloating and constipation.
