Kefir is made by soaking kefir grains in any type of milk, whether cow’s, goat’s, or sheep’s, and allowing it to ferment for several days. Kefir grains are gelatinous white particles that are made up of beneficial bacteria, yeast, milk proteins and sugars and when added to milk these organisms feed off the milk sugars and ferment it to produce a cultured drink that is similar in taste and texture to drinking yogurt.
